El quitosano (CS), un heteropolisacárido lineal derivado de la N-desacetilación de la quitina con propiedades antimicrobianas, ha sido ampliamente utilizado para este fin. Por ello, se estudió la aplicación de recubrimientos a base de CS con el fin de mantener la calidad durante la etapa poscosecha de Stenocereus pruinosus mejor conocida como pitaya, cuyo interés radica en que además de ser endémico de México, tiene un alto valor como antioxidante que le confiere propiedades funcionales a quien los consumen debido a que reducen las probabilidades de ataques al corazón, diabetes y cancer. Sin embargo, su vida postcosecha es de 3 días a temperatura ambiente por lo que solo se distribuye localmente. Por esta razón este trabajo formuló, caracterizó y aplicó recubrimientos para prolongar la vida postcosecha de pitaya emplando un extracto de hojas y semillas del árbol de Neem (NM) que se han utilizado como biopesticida, en este documento se combinó NM con CS y otros biopolímeros para mejorar las características antimicrobianas de los recubrimientos. El trabajo experimental se dividió en tres etapas. La primera consistió en obtener NM y CS. NM se obtuvo de las hojas y semillas, se comparó con un producto comercia. El CS fue obtenido mediante desacetilación termoquímica heterogénea a partir de quitina extraída de una fermentación láctica de desperdicios de camarón. La segunda etapa consistió en la formulación de matrices de encapsulamiento para el producto de neem comercial, donde CS se entrecruzó con hidroxipropilmetilcelulosa (CH) y CS se mezcló con goma de mezquite (CGM). Se obtuvieron mediante la formulación de emulsiones estabilizadas por el uso de emulsificantes. Al caracterizarlas se obtuvo que solo NCGM (emulsión NM-CS-GM) fue estable, sin embargo, solo NCH (emulsión NM-CH) preservaron las características de calidad de la pitaya durante 15 días a temperatura 10±5ºC y 80±5% de humedad relativa. La etapa tres se encapsuló la mezcla de NM de hoja y comercial en una matriz de CS injertado con 2-hidroxietilmetacrilato (Cg). Esto se realizó mediante emulsiones pickering, estabilizadas por nanofibrillas de quitina. Nuevamente, la emulsión más estable no pudo preservar las características de calidad de la fruta, pero sí lo hizo Cg durante 18 días a temperatura 10±5ºC y 80±5% de humedad relativa. Este resultado lo atribuimos a la presencia del 2-hidroxietilmetacrilato que es capaz de absorber agua y formar geles lo que impidió la migración de agua del interior al fruto al medio ambiente y mantuvo el resto de las características.; The development of edible coatings based on biopolymers has been applied for resh fruit and vegetable products, therefore it is of great interest on the quest of materials with null toxicity, biodegradable and biocompatible, whose objective is increasing the storage life preserving the quality characteristics. In this regard, Chitosan (CS) is a linear heteropolysaccharide derived from chitin Ndeacetylation with antimicrobial properties that has been widely used. Therefore, in this study the application of coatings based on CS was studied to maintain quality of postharvest pitaya (Stenocereus pruinosus). S. pruinosus is an endemic fruit of Mexico and it has high nutritional value for the consumers because they reduce the chances of heart attacks and cancer, however, the main problem is its perishability with a postharvest life of only 3 days at room temperature hence it is only locally distributed. For this reason, the aim of this study was the preparation, characterization and application of coatings to extend postharvest life of pitaya. The neem (NM) extract of leaf and seed from Neem tree has been used as a biopesticide, herein NM was combined with CS and other biopolymers to improve antimicrobial characteristics of coatings. The experimental work was divided into three stages. Initially, NE and CS were obtained and characterized. NM was obtained from the leaves and seeds and compared with a commercial product, while CS was prepared by thermochemical heterogeneous deacetylation from chitin extracted with a lactic acid fermentation. The second stage consisted of the formulation of the encapsulated matrices that were cross-linked with hydroxypropyl methylcellulose (CH), and C mixed with Mezquite gum (CGM) that encapsulated commercial NM, these were obtained by oil in water emulsions. NCGM (emulsion NM-CS-GM) was the most stable emulsion, however when these coatings were applied on pitaya, only NCH (NM-CH) preserved the fruit quality for 15 days at a temperature of 10±5°C and 80±5% relative humidity. In the third stage, a mixture of leaf NM and commercial NM was also encapsulated in a matrix of C grafted with 2-hydroxyethylmethacrylate (Cg) by Pickering emulsion, which were characterized after being stabilized by chitin nanofibers as solid particles in nanoscale. The most stable emulsion could not preserve the characteristics of the fruit quality, but Cg extended 18 days at temperature of 10±5 °C and 80±5% relative humidity the postharvest life of pitaya.
