APHOP presentó dinámicas de adsorción significativamente mayores en la interfase aire-agua, y produjeron espumas con diámetros de burbuja significativamente menores, mayor capacidad espumante, estabilidad y esfuerzo de cedencia, y menor drenado de líquido que APHN. Espectroscopía infrarroja transformada de Fourier (FT-IR) reveló que la estructura secundaria de APHOP fue diferente de APHN en términos de incremento en conformaciones-β (6.61% láminas-β, 19.6% giros-β, 0.8% láminas-β antiparalelas) y una disminución en agregados inter-moleculares (43.54%). El estudio multienzimático indicó que los cambios estructurales podrían haber inducido una disminución en la digestibilidad relativa de la proteína de APHOP respecto a APHN. Los resultados de este trabajo demostraron que la tecnología de HIUS mejora las propiedades superficiales y espumantes del aislado de proteína de haba, lo cual podría favorecer la revalorización de este cultivo.; Response surface methodology was used for establishing the amplitude (72.67%) and time (17.29 min) high intensity ultrasound (HIUS) conditions leading to an optimized faba bean protein isolate (OFPI) with lower interfacial tension, zeta potential and viscosity, and higher solubility than native faba bean protein isolate (NFPI). OFPI showed significantly higher adsorption dynamics at the air-water interface, and produced foam with significant smaller bubble diameter, higher overrun, stability and yield stress, and lower liquid drainage than NFPI. Fourier Transform Infrared Spectroscopy (FT-IR) revealed that the secondary structure of OFPI deferred from NFPI in terms of increases in β conformations (6.61% β-sheet, 19.6% β-turn, 0.8% anti-parallel β-sheet) and decreases in inter-molecular aggregates (43.54%). Multienzyme study pinpointed that the structural changes could have induced a decrease on the relative protein digestibility of OFPI respect that of NFPI.
